A non-profit agricultural organization that operates The Brass City Regional Food Hub, an urban farm, a greenhouse, nutrition education and healthy cooking programs, and farmers’ markets in Waterbury and the surrounding towns.  Brass City Harvest’s regional food hub is a social enterprise; when combined with our urban agricultural activities, a substantial amount of food is donated from this organization to other emergency food providers and senior centers in Waterbury.

 The position of Culinary Kitchen Leader will be expected to independently mobilize commercial kitchen operations including bakery items, lunch-to-go items, and other culinary programs including co-packing and food manufacturing. The Kitchen Leader shall work with executive staff to obtain the necessary state and federal commercial kitchen certifications as required by law for a food manufacturing operation.

 The goal of this position is to create and maintain a successful commercial kitchen operation that will enable light processing, creation of value-added food items from farm food, and to provide job incubator opportunities for ServSafe certified food operators who are seeking to lease commercial kitchen space.

 Examples of Job Duties:

  • Formalize the set-up of the food hub’s commercial kitchen for preparation for state/federal licensing.
  • Work with Northeast Laboratories to analyze recipes and samples for processing controls.
  • Interact with USDA, FDA, and CT Department of Consumer Protection for the proper nutritional analysis and labeling of products.
  • Facilitate product lines for the creation of grab-and-go or heat-and-eat food items.
  • Create various recipes for canned/jarred produce products as part of the development of new value-added foods under the private label of Brass City Harvest.
  • Facilitate Brass City Harvest Fresh! Baked goods line.
  • Facilitate infrequent, small-scale catered functions held at the Brass City Regional Food Hub.

Desired Qualification:

  • Graduation from a recognized Culinary Arts Program.
  • Two years’ experience working in a commercial or institutional kitchen.
  • Knowledge of commercial food processing. Certification in the Processing of Human Foods from UCONN, Cornell or other institutions of higher learning preferred. **Brass City Harvest will invest in the candidate for tis position by paying for the tuition to be certified in specific process controls curriculum.
  • Excellent work ethic.
  • Ability to supervise kitchen support staff.
  • Ability to maintain records critical to the instructions of the Process Authority regarding the processing of food.


This position will start as part-time with a goal of growing it into a full-time position.  Hourly compensation rate will begin at $22 per hour but is negotiable based upon experience.  Paid leave time is a negotiable item.  There are no medical benefits associated with this position.  There will be a 90-day probationary period.

 Special Requirements:

  • A qualified candidate for this position must be ServSafe certified.
  • Must possess a valid Connecticut driver’s license.
  • Two references are required.
